History and harvesting of True Lavender

A love story with Provence

This large flowering plant grows in dense groves and has a very pleasant smell. Each bush is made up of about ten small robust branches. The people of Provence have been using lavender for hundreds of years. In the cupboards to keep moths away, in honey to give it a flowery taste, in the kitchen to perfume plants, lavender fills the daily life of the South of France.

Under the intense blue sky and the golden sun, more than 2000 growers have been established for generations. They started to cultivate lavender in the first centuries after Jesus Christ, and even more in the Middle Ages. The discovery of its medicinal and olfactory virtues ensured its development throughout Europe. Elixirs, perfumes, sachets: Lavender, lovingly prepared in Provence, travels across the continent. Today, there are about 2000 family businesses proud of their know-how.

Harvesting lavender at daybreak

A well-tended lavender plantation can flourish for decades! Lavender bushes reach their peak in the fourth year. The best time to harvest lavender is when it is in bloom: in midsummer, between late June and August. It is best to harvest early in the morning when the weather is nice and dry. This allows you to pick the most open and fragrant flowers. Just after the dew, and before the sun is too high, the flowers keep all their fragrances.

The best tool is the pruning shears because they allow to cut the stems in a straight way, optimizing the regrowth of the lavender. This Mediterranean plant grows in full sun on rocky soil, but it also adapts to any good garden soil. It should be pruned every year in autumn after flowering so that it can keep its compact shape.

After picking, it is possible to store fresh lavender in damp paper in the refrigerator for a few days, or dry by keeping a stem of about thirty centimeters and letting them dry in the open air, flat, in a dry and well ventilated environment.

Fine Lavender, True or Aspic... What are the differences ?

Although they all have the same genus Lavandula, most Lavenders are distinguished by their species, the name that comes right after the genus. This classification establishes the foundation of botany and allows, what interests us most, the obtaining of essential oils as different as each other. To learn more, find out our guide to the different Lavenders.
